One of my favorite people in the whole world recently relocated from Washington D.C. to New Orleans. Ever since, I’ve been completely obsessed with New Orleans cuisine and culture as I am planning my escape. I’m not leaving Atlanta, but I am definitely looking forward to visiting NOLA very soon. All of the buzz surrounding Mardi Gras season isn’t helping me either. The excitement is too much, and I’m not even there! Since I can’t make that trip right now, I decided to do a little celebrating of my own and share some twists on some New Orleans dishes with you. It’s going to be fun and yes, a little spicy! One of my favorite New Orleans dishes is Chicken Creole. I think because it reminds me of what we in the south call smothered chicken. There are many ways to prepare it, but my favorite is frying chicken then stewing it in diced tomatoes, onions, bell peppers and garlic. Mm!!! Are you hungry yet? All of the hoopla with the Super Bowl had me ready to make this delicious dish into an appetizer, so I made sliders. You want to let the vegetables stew down good and get thick so there isn’t much liquid. It will make the sliders easier to assemble and to eat.
