This holiday season is bittersweet for me. The holidays always remind me of my grandparents’ house in Virginia Beach. When I was a little girl we would visit every year, alternating between Christmas and Thanksgiving. On top of our traditional dinners, my grandmother baked every treat imaginable from lemon meringue pie, to my favorite, “magic cookie bars.” She was one of those cooks that didn’t want you in the kitchen. She didn’t want you to steal her secrets. As I got older, and she realized that I was actually serious about learning what she knew, she started to teach me. She loved to make cakes. She said if you could make a good cake, you could make anything.
She passed away earlier this year, and the loss I feel as the holidays approach is overwhelming. Baking has become therapy for me when I miss her. So as I was at Walmart picking up my holiday fixings and decor, I decided to cheer myself up and make a cake. I have a feeling I will be making several cakes this holiday season. Also, the purchase of 2 bags of M&M’s® at Walmart (9.4 oz bags or larger) will donate up to one gallon of milk to the drive. I lucked up on some fancy new M&M’s® that are out for the season, M&M’s® Hot Chocolate and M&M’s® White Peppermint. I knew with Pillsbury™ Funfetti® Holiday Mix and Frosting, this was going to be the makings of a delicious cake! My granny made a sponge cake that was literally so good, we would fight over it. So my first cake of this season is a nod to that. This Hot Chocolate Sponge Cake is fluffy and delicious!

M&M’s® Hot Chocolate Sponge Cake
1 Box Pillsbury™ Funfetti® Holiday Cake Mix
1 container Pillsbury™ Funfetti® Holiday Vanilla Frosting
1 1/4c. Milk
4 Egg Whites
1/2c. Vegetable Oil
1tsp. Chocolate or Coffee Extract
M&M’s® Hot Chocolate, Crushed
M&M’s® Holiday Plain
Preheat the oven to 350. In a large bowl, mix cake mix, milk, oil and extract until smooth.
In a separate bowl whip egg whites until you get foamy stiff peaks. (This is what will give your boxed cake a light airy texture like a sponge cake.)
Fold egg whites into batter and pour batter on a sheet pan lined with parchment paper.
Bake for 30-35 minutes. Allow cake to cool for 15 minutes. Spread Pillsbury™ Funfetti® Holiday Vanilla Frosting on top of the cake.
Cut cake horizontally in four equal slices and later one on top of each. A spatula will help lift. Make sure cake is completely cool.
Use remaining frosting to frost the outside of the cake. Then freeze cake for 30 min.
Cover cake in crushed M&M’s® Hot Chocolate and make a festive decoration on top with the M&M’s® Holiday Plain.
