Dr. Seuss is one of my absolute favorite authors of all time! I know I’m not alone. Today, March 2nd is his birthday and people all over the country are celebrating it by showing children just how fun reading can be through Read Across America Day! My friend Pam even went to her granddaughter’s school with her husband dressed as Thing 1 and the Cat in the Hat to read to the class! It’s been so fun watching everyone get involved. My children were so excited to eat Green Eggs and Ham at school for breakfast this morning! When they found out what I made for the Potstickers Club today inspired be The Sneetches, they were a little excited, but more jealous than anything. Lol! Days like this are when I feel like what I do is worth it.
Reading is such an important part of a child’s development and being able to make recipes that teach them how to cook and learn at the same time are what I’m truly passionate about. One Fish Two Fish Red Fish Blue Fish has always been one of my favorite Dr. Seuss books and my favorite of his books to do cooking lessons with. We talk about shapes, colors, rhyming patterns and more and then have a snack of goldfish crackers and the Yink’s Pink Ink. Today I had it with my Sneetch Frittata for breakfast. - 1c. Strawberries
- 1/2c. Mango, cubed
- 1c. Silk Vanilla Coconut Milk
- 3-5 cubes of ice.
- Blend fruit together in a blender until smooth. Add milk and ice and blend again until smooth. Enjoy!
