I love a good pineapple! I have to wait until mine are overripe because they make my mouth itch if they’re not, but I just can’t get enough of them. Everyone is diving into their cool weather and Fall flavors around me, but its 80 degrees down here in South Florida. So, I’m feeling tropical!

Today, my wings have a tropical flair! These Spicy Pineapple Garlic Wings are sure to put a kick in your menu this weekend! You can adjust the spicy chili garlic in them to your heat preference, but its definitely a wing that will impress your guests and keep them coming back for more!
Spicy Pineapple Garlic Wings
4lbs. Chicken Wing sections (drumettes)
Oil, for frying
1/3c fresh pineapple, minced
2tsp Kosher Salt
1 t minced garlic
1 t spanish paprika
1T + 1tsp chili garlic sauce (find on ethnic food aisle)
2T dark brown sugar
1/2 tsp soy sauce
1 tsp cider vinegar
2Tbsp Unsalted Butter
Heat oil in heavy skillet or deep fryer to medium heat. Fry wings until golden, and crispy, about six minutes on each side depending on the size of the wings. Drain excess oil on paper towels on a plate. Meanwhile, pulse all ingredients in a food processor or blender until smooth. Heat sauce in a small saucepan a simmer for 2-3 minutes. Allow the flavors and ingredients to smoothly come together. Remove from heat and add butter. Toss wings in sauce. Garnish with cilantro (optional) and serve.
