If you like ice cream but are trying to get your life together, you’ll love smoothie bowls. At least that’s how I ended up here. I love smoothies, but I always prepare mine with the consistency of a milkshake. I like them very thick. Well imagine my delight when I discovered smoothie bowls! I was scrolling Instagram one day and came across these beautiful bowls, and life as I knew it would never be the same. I was captivated by all of the beautiful colors, that just make you want to eat healthier. What I loved even more was being able to incorporate so many different things that were good for me, and be able to taste each one because they aren’t completely blended all up like smoothies. I love the texture of all of the toppings, and I love that I can change it up everyday if I want. Even if I use the same smoothie base, the toppings make it something completely new!
Smoothie bowls don’t take any more work than smoothies. They just aren’t as portable. They force you to sit down, and actually enjoy them. Which isn’t a bad thing! Who wants a stressful, rushed morning? They’re not the best option if you’re flying out the door, but it if you want to enjoy a better breakfast and if you love to experiment with your food, you’ll love them like I do. This Tropical Blueberry Smoothie is one of my favorite to make. I really call it the ‘Surf Smurf.” I just used less liquid than I would normally use so it would have the proper consistency to serve in a bowl. You can always prepare a large batch and freeze for the week to save time. Then change up your toppings each day for an adventure!
Tropical Blueberry Smoothie Bowl
1 c. Fresh Spinach
3T Coconut Milk
1 c. Blueberries, frozen
1 c. Ripe Pineapple, cut into chunks
1/2 c. Mango, frozen
Blend greens, avocado, and coconut milk together until smooth. Blend in fruit until smooth. You can use less or more of the milk to get the consistency that you like. Pour into a bowl. Top as you wish. Enjoy! Simple. Right!?
