You know by now, that I’m a breakfast evangelist. I wholeheartedly believe in sharing the good news about the most important meal of the day! Since I have been cleaning up my eating a bit, I’ve experimented with different options for breakfast, that will still leave me full but won’t give me that “crash and burn” effect. (Bye, sugar.) One of my favorites, has been egg bowls. Sometimes, they’ll be strategically planned. Sometimes, I’ll just scramble some eggs, and throw left over veggies from the night before on top. They’re quick and delicious every single time, and super portable.
Here’s one I just threw together. If you need a quick and easy breakfast, full of protein, I think you’ll like it.
- 3 Egg Whites
- 1 handful of Spinach
- 1/2c. Baby Bella Mushrooms
- 1/4c. Diced Onion
- 1/4c. Turkey Sausage Crumbles
- 1/2 Red Bell Pepper, diced
In about one tablespoon of oil saute onions, peppers, mushrooms until tender, add spinach and allow to cook gently. Push veggies to one side of the pan and scramble egg whites. Fold in sausage crumbles until heated thoroughly, about 10 minutes. Transfer scrambled ingredients into bowl. Enjoy!
