Most times we are always the ones entertaining. Quite naturally, since we are the cooks people assume we are cooking and want to come over, some even EXPECT us to cook. The truth is, sometimes we want to kick-back and relax. While we love to entertain and enjoy the company of family and friends sometimes we don’t want the pressure of the set-up, clean up, AND the cooking. This summer, since we are trying to get settled in our new city and life, my suggestion is that we play it low key. We may have one or two summer shindigs, but my main agenda is relax, go with the flow, and just take the party with us wherever we go.
I came up with the perfect dessert for on-the-go entertaining whether we are going on a picnic, or even a fishing date, which has become my new favorite thing to do. It’s a decadent chocolate brownie, with wine infused whipped cream in individual cups, perfect for those summer cookouts you attend and want something easy to prepare and bring along. Listen. Show up with these brownies and some Black Box wine. Your friends are going to care less about who’s hosting and where the party is…and they will love you…FOREVER.
Boxed wine??? Yes, honey! The box will fit perfectly into your cooler with your ice, and has a spout for easy pouring. You’ll be surprised at how smooth and tasty it is and you’ll pay about 40% less compared bottled wines. Black Box has won over 50 gold medals for it’s quality. If Cabernet Sauvignon (like I used) isn’t your thing, they also have Merlot, Chardonnay, Pinot Noir and Pinot Grigiot varieties. It will stay fresh for up to six weeks, so that’s AT LEAST two cookouts or outings! So here are the deets on the Brownie Buckets. They are super easy:
Melt 1/4c. Semi-Sweet Chocolate Chis into 1/2 c. Heavy Cream. 30 sec in the microwave should do the trick.
Mix in 3/4c. Sugar
Beat in two eggs. 1 Tbsp Black Box Cabernet Sauvignon, and 1/4tsp Almond extract.
Mix in 3 Tbps of Flour, until just combined.
Pour into a greased baking dish. Use an 8×8 for thicker brownies. I wanted mine thinner to make “bites.” Bake for 15-20 minutes at 350 degrees.
For the Cabernet Cream: Mix 1c. Heavy Cream, 2Tbsp Black Box Cabernet Sauvignon, 1/4c. Powdered Sugar, 1/2 split vanilla bean, and whip to stiff peaks. You can stabilize thecream to last longer by whipping two teaspoons of marshmallow cream into it.
It should be a really light pink or lavender shade depending on how much wine you really put in it…and very smooth.
Place brownies in the bottom of each bowl and layer with the cream, parfait style. You can even add fruit if you want. Just make sure when you are out you keep them on ice in the cooler and eat them within 4 hours.
Tying with a ribbon and spoon makes for very cute decor, AND super simple serving on the go!
